Tiny bowls of intensely flavoured noodles that were once sold from canal boats — still served in the same miniature style.

What they are

Small bowls of pork or beef noodles in a rich blood-thickened broth — the small size is traditional (from canal boat sales); you order 4–6 bowls per person.

Flavour

Deep, dark, slightly funky broth with fragrant herbs; beef version has more intensity; pork version lighter but still rich.

Where to eat them

Aree and Phahon Yothin areas have famous boat noodle clusters; also Khlong boats in the canal area; under 25 THB per bowl.

Order process

Sit, the server marks a tally on paper for each bowl — keep ordering until satisfied; typically 8–12 bowls per person.

What to add

Fried pork rind, blood cubes, and bean sprouts are common optional add-ins — most stalls have them on the table so you can adjust each bowl as you go.

A note on portion size

The bowls really are tiny — a few mouthfuls each — so don't be surprised at needing far more bowls than a normal noodle soup order to feel full.
