Marinated whole chicken grilled slowly over charcoal — a Northeast Thailand classic that's now a Bangkok street food staple.

What it is

Chicken marinated in lemongrass, garlic, fish sauce, and coriander root, then grilled low and slow over charcoal until golden and crisp-skinned.

Serving style

Usually sold half or whole bird, chopped tableside with scissors, served with sticky rice, som tum (green papaya salad), and jeaw (chilli dipping sauce).
