Vendors paddle wooden boats loaded with fruit, cooked food, and souvenirs through narrow canals, calling out to canal-side buyers and tourists alike — the produce is genuinely fresh, and boat-cooked dishes (som tum pounded to order, noodles boiled on a portable stove balanced in the boat) are a real specialty.
Morning (8–10am) is best for Damnoen Saduak before tour buses arrive in force; Amphawa is specifically an evening/weekend market and doesn't really exist during the day; Taling Chan and Klong Lat Mayom run Saturday–Sunday only.
